HOW TO CREATE PREFAB, APPLY TOKEN UV TEXTURE, AND FIX TOKEN PLACEMENT.

SOLUTION FOR MISSING IMAGE - drag and drop in the edited 'uv snapshots' that were used in maya into your assets folder. Tokens should immediately update and show your design in the game scene.
SOLUTION FOR HORIZONTAL POS: If your tokens are not ALREADY prefabs, make sure they are. I needed a refresher on this simple step. (To create prefab: drop tokens into heirarchy from your assets, to make them into game objects. Then drag the new game objects into your assets to turn them into prefabs. Delete tokens from heirarchy). Click on GameManager- in the inspector, drag the prefab tokens accordingly under 'redCoin' and 'yellowCoin.'
Double click on token prefab in assets to adjust rotation. Press CTRL when rotating for exact degrees. :)
